Air Fryer Lamb Salad
Make use of your lamb leftovers with this delicious Greek air fryer lamb salad cooked in the air fryer using leftover lamb shoulder.

Ingredients
- 300 g Leftover Sliced Lamb
- Salad Garnish
- Handful lettuce
- ½ red cabbage
- 1 red onion
- 4 Salad Tomatoes
- ½ cucumber
- Greek Dip
- 4 Tbsp Greek yoghurt
- 1 Tsp lemon juice
- 1 Tbsp mayonnaise
- ½ Tsp Garlic puree

Instructions
- Do your prep. Shred the lettuce, shred the red cabbage, peel and slice the red onion. Slice the tomatoes and cucumber and place them onto a serving platter leaving space for the dip and the lamb. Place the lamb into the air fryer. If the pieces are too big, then cut into quarters.
- Air fry the sliced lamb for 3 minutes at 180c/360f or until the lamb is piping hot. Whilst the air fryer warms up the lamb add the Greek dip ingredients into a bowl and mix.
- Finish the salad by adding the lamb and the dip and serve.

Notes
- Optional. If you would like pitta breads with your lamb salad, then you can also warm them up in the air fryer. Just another 3 minutes at the same temperature.
