Air Fryer Mashed Potato Cakes

You will love these Air Fryer mashed potato cakes. They are crips fried mashed potatoes with bacon and cheese ready in just a few minutes.

Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 6-8 strips bacon cooked and crumbled
  • 1/4 cup green onion diced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 eggs beaten
  • 1 cup flour
  • 2 cups panko crumbs

Instructions

  1. Fry the bacon until crispy and drain on a paper towel until cool.
  2. Crumble into small bits.
  3. Place the bacon bits into a large bowl.
  4. Add your mashed potatoes, cheddar cheese, and green onions.
  5. Stir to combine
  6. Line a baking pan with parchment paper.
  7. Place all of the mashed mixture on the baking pan.
  8. Spread the mashed potato mixture evenly across the pan.
  9. Place it in the freezer for 30 minutes.
  10. Use a circle cookie cutter and cut out circles of the mashed potato mixture.
  11. Set to the side.
  12. Continue until you have all of the circles cut out.
  13. Prepare your dredging station.
  14. Flour in one bowl, beaten eggs in the second bowl, and the panko crumbs in a third bowl.
  15. Dip your potato cake into the flour, then eggs and finally the panko crumbs.
  16. Place the potato cake in your Air Fryer,
  17. Make sure to ONLY do one layer of the potato cakes in the Air Fryer.
  18. Set the temp to 370 for 6-8 minutes.
  19. For best results, serve immediately, while hot and crispy.
