Ingredients
- 3 zucchini medium
- 1/2 cup flour
- 1 tsp salt adjust to taste
- 1 tsp black pepper adjust to taste
- 1 tbsp Italian seasoning
- 2 egg large
- 1 cup bread crumbs panko or italian bread crumbs
- 1/3 cup Parmesan Cheese
- 1 tsp Cooking spray oil
Instructions
- Combine the flour, salt, pepper, and Italian seasoning in a large, shallow plate.
- In a separate small bowl, whisk the eggs together and set aside.
- In another bowl, combine the bread crumbs with the Parmesan cheese.
- Cut zucchini into 1/4-inch thick slices. Dip each round into the flour mixture, followed by the egg mixture, then the breadcrumb mixture.
- Coat the air fryer basket with cooking spray and place the zucchini in the basket in a single layer. Spray the zucchini chip tops with a light coat of cooking spray.
- Air fry at 400°F for 5 minutes. Turn the zucchini over and air fry for an additional 5 minutes, or until they are golden brown.
