Ingredients

  • 2 peaches ripe but slightly firm
  • 1 tablespoon butter or vegan butter melted
  • 1 - 2 tablespoon maple syrup depending on your desired sweetness level
  • 1 tablespoon coconut sugar or brown sugar
  • ¾ teaspoon ground cinnamon
  • Pinch of flakey sea salt
  • Serving Ideas: vanilla ice cream (dairy-free or regular), Greek yogurt, whipped cream, granola, crushed graham crackers, walnuts or pecans

Instructions

    Cup of Yum
  1. Preheat your air fryer to 330°F (165°C).
  2. Wash and dry the peaches, then cut them in half lengthwise and remove the pits.
  3. In a small bowl, mix together the maple syrup, sugar, and cinnamon. Set the mixture aside.
  4. Carefully line the bottom of your air fryer basket with parchment paper. Then, brush the melted butter onto the cut side of the peach halves and place the peach halves cut side down (skin-side up) in the air fryer basket, ensuring they are not overlapping.
  5. Air fry the peaches for 6 minutes.
  6. Using tongs, carefully flip the peaches over. Brush the maple sugar mixture onto the cut side of the peaches.
  7. Continue air frying for another 6-8 minutes until the peaches are caramelized, fork-tender, and golden. Avoid letting the edges burn.
  8. The peaches will be soft, so I like to use a big spoon or spatula to place them in a bowl or on a serving plate. Serve warm with ice cream, honey, yogurt, and/or a sprinkle of your favorite granola. Enjoy!

Notes

  • Coconut Sugar Sub: Use light or dark bown sugar.
  • Adjust sweetness: Customize the sweetness by tweaking the sugar or maple syrup amounts. Taste before brushing onto the peaches to get it just right.
  • Flip gently: When flipping halfway through cooking, handle the peaches with care to avoid damaging their delicate flesh.
  • Frozen peaches option: While fresh is best, frozen peaches work too, especially when fresh ones aren’t in season. Thaw them before air frying and pat dry to remove excess moisture. Adjust cooking time as needed.
  • Baking: You can bake peaches in the oven instead of using an air fryer. The oven won’t provide the same quick and even heating, resulting in a slightly different texture, but you can still enjoy delicious baked peaches. Preheat your oven to 350°F and bake for 15-20 minutes.
  • Storing: If you have leftovers, allow the air-fried peaches to cool completely. Transfer them to an airtight container or wrap them tightly with plastic wrap, and store them in the refrigerator for 2-3 days. Note that their texture may soften slightly when refrigerated.
  • Microwave Reheating: Place the peaches in a microwave-safe dish and heat in 20-30-second intervals to avoid burning.
  • Oven Reheating: Preheat your oven to 325°F (163°C). Place the peaches in a baking dish, cover with foil, and heat for 10-15 minutes or until warmed through.
  • Air Fryer Reheating: Preheat the air fryer to 350°F (175°C). Place the peaches in a single layer in the basket and reheat for 3-5 minutes or until warmed to your liking.
