Ingredients

  • 1 green plantain
  • 1 tablespoon oil
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste

Instructions

    Cup of Yum
  1. Start by removing the plantain peel. First, cut off the ends of your plantain on both sides. Then, make an incision into the peel lengthwise, but make sure you don't cut into the plantain. Carefully pull the peel off the plantain.
  2. Then, slice your plantain as thin as possible with a mandolin slicer or a sharp knife.
  3. Mix the sliced plantain, oil, salt, and pepper, and massage all the pieces so they absorb some of the oil.
  4. Place them in the air fryer in a single layer. You will probably have to work in 2 or 3 batches.
  5. Cook them at 350 degrees F for 6-7 minutes or until golden brown and crispy.
  6. Let the chips cool off for a few minutes, and then serve with your favorite dip.

Notes

  • A
  • mandoline slicer
  • will give you consistent, thin chips. Just be sure to use the hand guard or a
  • cut-resistant glove
  • to protect your fingers—those blades are sharp!
  • Don't overcrowd the air fryer. Work in batches and give each slice plenty of room to breathe. My air fryer takes two batches to make one plantain's worth of chips.
  • While salt and pepper are classic for a reason, you can get creative with your seasonings. For a sweet and spicy twist, try sprinkling your chips with chili powder, cumin, or even cinnamon sugar.
  • Cooking time will vary depending on your air fryer and how thin your chips are. Keep an eye on them while cooking, and pull them out when they start turning brown on the edges.
