- 1 pound Yukon gold potatoes
- 1 1/2 tablespoons extra virgin olive oil
- 1/2 teaspoon fine sea salt or to taste
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon freshly ground black pepper or to taste
- 1 tablespoon fresh chives finely chopped, for garnish
Instructions
- Begin by prepping your potatoes. Cut them into uniform bite-sized cubes, approximately a 1/2-inch to 3/4-inch thick. You can keep the skin on.
- In a mixing bowl, combine the potato pieces with extra virgin olive oil, sea salt, dried oregano, garlic powder, and black pepper. Make sure the potatoes are well-coated.
- Arrange the seasoned potatoes in a single layer in the air fryer basket. Avoid overcrowding if you want them evenly crisped.
- Set your air fryer to 400°F and cook the potatoes for 18 to 20 minutes. Toss the potatoes halfway through the cooking time.
- The potatoes are ready once they turn golden brown (they need to be crispy on the outside and fork-tender on the inside). If you're using fresh chives, sprinkle them over the top before serving.
