Ingredients

  • 1 pound Yukon gold potatoes
  • 1 1/2 tablespoons extra virgin olive oil
  • 1/2 teaspoon fine sea salt or to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper or to taste
  • 1 tablespoon fresh chives finely chopped, for garnish

  1. Begin by prepping your potatoes. Cut them into uniform bite-sized cubes, approximately a 1/2-inch to 3/4-inch thick. You can keep the skin on.
  2. In a mixing bowl, combine the potato pieces with extra virgin olive oil, sea salt, dried oregano, garlic powder, and black pepper. Make sure the potatoes are well-coated.
  3. Arrange the seasoned potatoes in a single layer in the air fryer basket. Avoid overcrowding if you want them evenly crisped.
  4. Set your air fryer to 400°F and cook the potatoes for 18 to 20 minutes. Toss the potatoes halfway through the cooking time.
  5. The potatoes are ready once they turn golden brown (they need to be crispy on the outside and fork-tender on the inside). If you're using fresh chives, sprinkle them over the top before serving.
