Ingredients

  • 1 ½ cups self-rising flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon pumpkin pie spice or cinnamon
  • pinch of fine sea salt
  • ¾ cup pure pumpkin puree
  • 1 large egg
  • splash of water
  • Olive oil spray
Honey or Maple Pecan Cream Cheese
  • 1 brick (8 oz) cream cheese, softened
  • ⅓ cup pecans, chopped
  • 2-3 tablespoons honey or maple syrup
  • ½ - 1 teaspoon cinnamon, ground, if using honey
Maple or Honey Pecan Butter
  • ½ cup butter, softened
  • ⅓ cup real maple syrup or honey
  • ½ cup pecans, roughly chopped
  • ¼ - ½ teaspoon cinnamon, ground, if using honey

Instructions

    Cup of Yum
  1. Get out and measure all of your ingredients.
  2. In a large bowl, stir together the flour, sugar, pumpkin spice, and salt.
  3. Stir until blended.
  4. Add the pumpkin puree and stir until combined into a dough.
  5. You may need to use your hands to form a smooth dough.
  6. If your air fryer requires preheating, preheat it on the air fryer setting at 350°F for 5 minutes.
  7. Lightly flour a work surface and knead the dough a few times to get a uniform dough. The dough should be slightly dry but it holds together. Divide the dough into 4 parts and roll the portions into balls.
  8. On your lightly floured work surface roll each portion into a long log 8-9 inches long.
  9. Bring the two ends together and pinch them together to form a circle. Repeat with the remaining dough balls.
  10. In a small bowl add egg and water.
  11. Whisk until blended.
  12. Spray the air fryer basket with olive oil spray. Place the bagels into the air fryer about 1 inch apart, you may need to air fry in batches. Brush all over the tops of the bagels with the egg wash.
  13. Air fry 7-8 minutes until very lightly browned and cooked through.
  14. Repeat with the remaining bagels.
  15. These bagels are good for 2-3 days at room temperature, needing to store them any longer and I suggest they be frozen. They are good up to 3 months in the freezer. Let them thaw overnight in the fridge.
  16. I love to cut open the bagels lengthwise and pop them back into the air fryer cut side up for an additional 3 minutes to toast. Then a generous smear of honey pecan whipped cream cheese is my favorite way to enjoy these bagels. However, they are just as delicious with plain cream cheese or butter! How about a bagel sandwich with sliced brie, apples, and a smear of cranberry sauce, divine! Enjoy every bite!
Honey or Maple Pecan Cream Cheese
    Cup of Yum
  1. Blend and then whip ingredients into room temperature cream cheese and taste to see if more cinnamon is needed. You can also serve cinnamon cream cheese too. Spread on bagels. Enjoy every bite!
Maple or Honey Pecan Butter
  1. In a small bowl, combine butter, syrup (or honey) and pecans. If using honey consider adding cinnamon. Stir and blend until smooth. Set aside until needed. Use within 2 hours. If not, place in a resealable container and store in your fridge 30 minutes to a hour before needed for best results.
