Air Fryer Rack Of Lamb Ingredients:
- 1 kg Small Rack Of Lamb
- 2 Tbsp grainy mustard
- 1 Tbsp extra virgin olive oil
- salt & pepper
Other Ingredients:
- 6 Tbsp Instant Pot Mashed Potatoes
- 250 ml Instant Pot Lamb Bone Broth
- 400 ml Soup Maker Tomato Sauce
- 50 ml red wine
- 2 Tsp rosemary
Instructions
- Start your Instant Pot mashed potatoes. Peel the potatoes and get them in the Instant Pot.
- French the rack of lamb. Using a knife trim down any fat or meat that connects each of the racks to each other.
- Cover your rack of lamb in your marinade ingredients (mustard, salt, pepper and olive oil) and place onto your air fryer oven shelf. Place the shelf on the 2nd shelf from the top.
- Set the time to 25 minutes and the temperature to 180c/360f.
- While the rack of lamb is cooking do your other prep. Mash your potatoes and add the rest of the ingredients into the blender for the homemade lamb gravy. I also reserve about 1tbsp of mashed potato to go in the blender with the gravy ingredients as it is a natural thickener.
- When the air fryer beeps, slice up your rack of lamb and serve each plate with mashed potatoes, lamb rack and your homemade lamb gravy.

Notes
- I always start by peeling and dicing my potatoes for the Instant Pot mash as this takes the longest to cook. Then I can mash it when the air fryer rack of lamb is in the final stages.
- I used tomato sauce and lamb bone broth from the freezer. You might not have these in, in which case you can use a shop bought lamb stock and some tinned tomatoes.
- I made my Instant Pot mashed potatoes with butter, rosemary and salt and pepper. To help with the flavour I added in a little lamb stock too.
