Ingredients
- 1 pound Yukon gold potatoes cut into 1 inch cubes
- 1 tablespoon olive oil
- ¼ cup Parmesan Cheese grated
- 1 tablespoon Italian seasoning click link for the recipe
- 1 teaspoon sea salt recommended: flaky sea salt
- 1 teaspoon dried minced garlic
Instructions
- Optional: add the cubed potatoes to a large bowl of salted water (with 1-2 teaspoons salt). Let the potatoes soak in the water for 30-60 minutes. Drain the potatoes and pat them completely dry with a paper towel.
- Preheat an air fryer to 400°F.
- Toss the potatoes with the olive oil, parmesan cheese, Italian seasoning, sea salt and dried minced garlic.
- Spread the seasoned potatoes in an even layer in the air fryer basket.
- Air fry for 10 minutes at 400°F.
- Open the air fryer, shake the potatoes and cook for an additional 8-10 minutes at 400°F.
- Remove the potatoes from the air fryer and serve immediately.

Notes
- For extra crispy potatoes, always soak them before cooking them. This will help remove some of the excess starch from the potatoes and will help the potatoes crisp up in the air fryer. If you don't have time, you can skip this step and the potatoes will still be delicious, just not quite as crisp.
- You can cube the potatoes ahead of time and leave them soaking in water until you’re ready to season and cook them in the air fryer. Always be sure to drain the cut potatoes and pat them dry completely before seasoning them and adding them to an air fryer.
- Leave the potato skins on the potatoes to save time and help the potatoes achieve an even crispier texture.
- Do not season the potatoes with the salt until you’re ready to cook them in the air fryer. Seasoning the potatoes with salt, then letting them sit for more than a couple of minutes, means the salt will pull water from the potatoes and they are more likely to come out of the air fryer soggy.
- Always make sure there’s room around the potatoes in the air fryer. This allows the air in the air fryer to flow around each of the potatoes, so they’re crispy on all sides.
- Leftover air fryer roasted potatoes can be stored in an airtight container in the fridge for up to 7 days. Reheat them in the air fryer for 3-4 minutes at 400°F.
