Air Fryer Shredded Beef Chimichanga Recipe

Crispy air fryer chimichanga with shredded beef. This healthier version of a popular deep fried dish will become a family favorite dish. Top with tomatoes, sour cream and any ingredient you love in burritos.

Ingredients

  • Prepared Mexican shredded beef
  • flour tortillas
  • olive or avocado oil
  • chopped tomatoes
  • sour cream

Instructions

  1. Pan fried shredded beef to remove some of the moisture out of the meat.
  2. Warm the tortillas on a skillet over medium heat to soften the tortillas.
  3. Place a tortilla on a platter and put 3/4 cup of shredded beef in the middle of the tortilla, and evenly spread the meat leaving a couple of inches around the tortilla.
  4. Fold in the outside of the tortilla (horizontal sides), then start folding horizontally rolling the tortilla into a burrito.
  5. With a pastry brush dipped in oil lightly coat all sides of the burrito.
  6. Place seam side down in the air fryer.
  7. Turn air fryer on. Heat at 375°F for 10 minutes, then turn chimichanga over and air fry for an additional 6-10 minutes.
  8. Put the chimichanga on a serving dish and top with tomatoes, crema and any other ingredients you would love on the chimichanga.
