Ingredients

  • 1 pound Shrimp peeled and deveined (and defrosted if using frozen, 450g
  • 1 pound yellow squash or zucchini, cut into quarter-inch pieces, 450g
  • 1 green bell pepper deseeded and sliced
  • 1 pound mushrooms halved or quartered, if large
  • 4 tablespoons tamari soy sauce or regular soy sauce, if not gluten free
  • 2 tablespoons olive oil
  • 2 teaspoons sesame oil
  • 1 teaspoons garlic minced
  • 1 teaspoons ginger minced
  • Serve with Easy Yum Yum Sauce (optional, but highly recommended)

Instructions

  1. Preheat air fryer to 400 degrees F / 200 degrees C.
  2. Place shrimp, squash, pepper, and mushrooms in a mixing bowl. Add tamari, olive oil, sesame oil, garlic and ginger and toss until fully combined.
  3. Add half the hibachi mixture into the air fryer basket and cook for 8-9 minutes, turning over halfway through the cook time.
  4. Remove and add the remaining shrimp mixture and cook for another 8-9 minutes.
  5. Serve air fryer shrimp hibachi as is (low carb) or along with some yum yum sauce.

Notes

  • Defrost and drain frozen shrimp thoroughly to prevent extra moisture during cooking.
  • Using jumbo shrimp helps maintain texture; smaller shrimp may cook differently.
  • Marinate shrimp and vegetables for 30 minutes to 2 hours for deeper flavor if time allows.
  • Cut vegetables into uniform sizes to ensure even cooking in the allotted air fryer time.
  • Use reduced salt tamari or soy sauce for lower sodium content if desired.
  • Store leftovers in an airtight container in the fridge for up to four days.
  • Cooking time may vary with shrimp size; avoid overcooking for best texture.
  • The recipe can be doubled or tripled but requires multiple air fryer batches.
