Ingredients
- 1 pound Yukon or baby gold potatoes
- 2 tablespoons butter melted
- 1 tablespoon oil
- 3-4 cloves garlic minced
- 1 tablespoon finely chopped fresh parsley
- salt & pepper to taste
Instructions
- Clean the potatoes and place the potatoes in a pot of salted water, covering about 1 inch above. Cook potatoes until soft, about 20-25 minutes.
- Drain the potatoes and allow to cool for 5 minutes. Transfer to a cutting board or large sheet pan and gently smash the potatoes using a potato masher, or the bottom of a cup, until flattened to about 1/2 inch thick.
- In a small mixing bowl, combine the melted butter, oil, garlic, and parsley. Brush the potatoes with the garlic butter mixture. Generous sprinkle with salt & pepper.
- Preheat air fryer to 400ºF. Transfer the potatoes to the air fryer basket in a single layer. Cook for 15 minutes or until the potatoes are crispy and golden.

Notes
- Storing leftovers: These smashed potatoes might not be quite as crispy as when they are freshly made, they will keep in the fridge for up to 5 days and 3 months in the freezer. Once completely cool, store them in a sealed, airtight container or bag.
- To reheat: Bring refrigerated or frozen potatoes close to room temperature. Reheat at 425ºF in the oven or in the air fryer for about 5 minutes, or until they are the texture and temperature you want.
