Air Fryer Spring Roll Recipe

Ingredients

For the filling ingredients:
  • 2 tablespoons vegetable oil
  • 2 cups Napa cabbage finely shredded
  • 2 cups bean sprout
  • 1 cup carrot finely shredded
  • 1 cup mushrooms finely chopped
  • ½ cup green onion finely sliced
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 ½ tablespoon white sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper ground
For preparing:
  • 8-12 spring roll wrappers see notes
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 2-3 tablespoon neutral cooking oil generic cooking oil

Instructions

  1. Make sure the veggies are finely shredded or chopped.
  2. Heat a large pan over medium heat and add the oil. Once the oil is hot, add the napa cabbage, bean sprouts, shredded carrots, and mushrooms. Stir constantly until the vegetables start to soften, about 2-3 minutes.
  3. Add green onion, cornstarch mixture, sugar, salt, and pepper. Stir and cook for another 1-2 minutes. The vegetables should be cooked down while having a slight crunch. Remove the vegetable mixture from the heat and set it aside.
  4. Lay out a single spring roll wrapper, oriented in a diamond shape with a corner facing you. Brush some of the second cornstarch slurry mixture along the corner in the top half of the wrapper.
  5. Scoop about 3 tablespoons of the filling into the center of the wrapper. Do not overfill the wrappers. Fold the lower third of the wrapper over the filling, then fold in both the left and right corners over the filling. It should resemble an envelope at this point.
  6. Continue to roll it from the bottom up. Press down along the seam gently to seal, brushing on more of the cornstarch mixture if needed. Repeat until the filling is gone.
  7. Preheat air fryer to 400 degrees F for 3 minutes.
  8. While it preheats, brush each side of the spring rolls with a thin layer of oil and place in a single layer in your air fryer basket, leaving about ½ inch of space between them. You may need to cook them in batches depending on the size of your air fryer. You can use spray oil if you prefer, but brushing the oil leads to more even coverage and crispiness.
  9. Air fry at 400 F for 12-15 minutes, flipping them halfway through the cooking time.

Notes

  • Use frozen wheat spring roll wrappers found at Asian markets; they differ from round rice flour wrappers.
  • Preheat the air fryer before cooking to ensure even crisping.
  • Brush oil on the wraps rather than spraying for a crisper finish.
  • Ensure vegetable filling is finely shredded and cooked down but still slightly crunchy.
  • Optionally add cooked ground pork or shredded chicken to the filling to increase protein.
