Air Fryer Sweet Potato Wedges

After a few years of loving my air fryer, these sweet potato wedges have become a go-to weeknight dish. In just 20 minutes, you’ll have perfectly crisped, golden edges with a soft, sweet center—ready to dunk into your favorite dip! Serve them up as a tasty appetizer, a satisfying snack, or an easy side dish.

Ingredients

  • 2 medium sweet potatoes (Either wash and peel, or scrub and leave on the skin.)
  • 2 tablespoons olive oil (1 to 2 tablespoons)
For the seasoning
  • 1 teaspoon mixed dried herbs (Italian herbs are ideal, but feel free to use any that you have e.g. basil, oregano, thyme, or a mixture)
  • ¾ teaspoon paprika
  • ¼ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper

  1. Cut the sweet potatoes into small wedges. I usually do this by cutting the sweet potato into 2 or 3 pieces (across the width). Then I slice each of these pieces in half lengthwise, and then into smaller wedges around 1cm thick.
  2. Preheat the air fryer to 390F/200C. Meanwhile, dry the wedges either with kitchen paper or in a clean tea towel. Then toss them well with the oil and seasonings in a large bowl.
  3. Add the wedges to the air fryer basket. You may need to do this in two batches. A few may overlap but be careful not to overcrowd the basket. Air fry for 15 minutes, shaking the basket half way through, or until the wedges are crisped and golden on the outside and soft inside. Keep a close eye on them towards the end of cooking to make sure they don't burn.
  4. Serve immediately either as an appetizer with dips (sour cream and sweet chili sauce work well) or as an easy, tasty side dish.

Notes

  • Servings: If you're only serving 2 people, feel free to halve the amounts e.g. use only 1 medium sweet potato. Or you can toss the full amount in the oil and seasoning and freeze half for next time (you can cook straight from frozen - just add a few minutes onto the cooking time). 
  • If serving 4, you may have to cook the wedges in two batches, depending on the size of your air fryer.
  • Seasoning: If you like, you can simply use around a tablespoon of this all-purpose seasoning instead of all the individual herbs and spices. It's a great idea to keep some of this in your pantry!
