Ingredients

  • 4 salmon filets skin on*, 4-oz. each
  • 1/2 cup reduced-sodium soy sauce (120g)
  • 3 Tbsp brown sugar (36g) I used Swerve
  • 2 Tbsp rice wine vinegar (30g)
  • 1 tsp ginger paste
  • 1 tsp minced garlic
  • 1/2 tsp minced onion seasoning can sub onion powder
  • 3/4 Tbsp cornstarch (6g)
  • sesame seeds optional for garnish

Instructions

    Cup of Yum
  1. In a small bowl, whisk together the soy sauce, brown sugar, vinegar, ginger paste, minced garlic, minced onion and cornstarch.
  2. Pat the salmon filets dry with a paper towel.
  3. Take out 1/2 cup of the teriyaki marinade and pour it in a small saucepan to make the teriyaki glaze. Set to medium heat, and cook, stirring occasionally, until thick and saucy.
  4. Add the rest of the marinade to a flat dish and place the salmon skin-side up. Rub the marinade all over the salmon filets and marinate for 10 to 15 minutes.
  5. Preheat the air fryer to 400F. When ready, spray the air fryer basket with cooking spray. Place the salmon skin side down in the air fryer basket and air fry for 6-11 minutes, or until the internal temperature is 140F to 145F. Brush the teriyaki glaze over the salmon during the last 1-2 minutes.
  6. Remove the salmon from the air fryer and top with more teriyaki glaze, if desired. Sprinkle with sesame seeds and enjoy!

Notes

  • *The salmon filet holds together more easily when cooked with the skin on. Also, the salmon turns our more moist and flakey when the salmon is cooked with the skin on versus removed (it dries out easier this way!). Don't worry if you don't want to eat it. Once you cook the salmon, the skin peels off effortlessly anyway!
