Ingredients

  • 2-3 small zucchini sliced thinly, about ? - ¼ thick
  • ½ cup all-purpose flour
  • 2 teaspoons paprika
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1½ cups from 8 oz box panko breadcrumbs
  • ¼ cup finely grated Parmesan cheese
  • 2 eggs beaten

  1. Slice the zucchini into ? - ¼ inch thick chips, using a mandolin slicer gives you uniform thickness and allows even cooking.

  3. Flour, salt & pepper, and paprika. Mix together
  4. Eggs, beaten
  5. Breadcrumbs or crushed pork rinds and parmesan cheese
  6. Preheat air fryer at 400F for 5 minutes
  7. Dip the zucchini in the flour mixture, then egg, and then the breadcrumbs and place on a baking rack.
  8. Add a single layer of breaded zucchini chips in the bottom of the air fryer basket, spray with vegetable oil.
  9. Fry at 400F for 6-8 minutes, flip at 4 minutes .
  10. Cook until chips are browned and crispy
  11. Add any additional salt or pepper to taste
  12. Serve immediately
  13. Store leftovers in refrigerator in airtight container

Notes

  • If you want these to be keto you can coat them in pork rinds
