- 2-3 small zucchini sliced thinly, about ? - ¼ thick
- ½ cup all-purpose flour
- 2 teaspoons paprika
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1½ cups from 8 oz box panko breadcrumbs
- ¼ cup finely grated Parmesan cheese
- 2 eggs beaten
Instructions
- Slice the zucchini into ? - ¼ inch thick chips, using a mandolin slicer gives you uniform thickness and allows even cooking.

- Flour, salt & pepper, and paprika. Mix together
- Eggs, beaten
- Breadcrumbs or crushed pork rinds and parmesan cheese
- Preheat air fryer at 400F for 5 minutes
- Dip the zucchini in the flour mixture, then egg, and then the breadcrumbs and place on a baking rack.
- Add a single layer of breaded zucchini chips in the bottom of the air fryer basket, spray with vegetable oil.
- Fry at 400F for 6-8 minutes, flip at 4 minutes .
- Cook until chips are browned and crispy
- Add any additional salt or pepper to taste
- Serve immediately
- Store leftovers in refrigerator in airtight container
