Ingredients
- cooking spray
- 1 large zucchini sliced into ¼ inch thick rounds
- ½ cup Parmesan Cheese grated
- Ground pepper and salt to taste
Instructions
- Cut the zucchini into very thin slices using a mandolin.
- salt the zucchini lightly. Allow them to sit for a few minutes. Absorb the excess water with paper towels, then season with ground pepper.
- Lightly spray the inside tray of the air fryer with avocado oil cooking spray.
- Lay the zucchini slices, then sprinkle the Parmesan cheese over them.
- Set the air fryer to 370°F. Cook in batches, for 8-10 minutes, or until the cheese is golden brown and zucchini is crispy to your liking.
- Let it cool for 2-3 minutes into the tray, to crisp up even more.

Notes
- any cooking spray of choice will work.
- slice the zucchinis thin. You can use a mandolin
- freshly grate your own parmesan if you can
- don't forget to remove the excess moisture off the zucchini with paper towels.
