Almond Butter Cookies

Soft and chewy, these almond butter cookies made from homemade almond butter. A treat for those with peanut allergies, and so good, everyone will love them!

Ingredients

  • 1/2 cup butter see notes
  • 1/2 cup almond butter
  • 1/2 cup granulated white sugar
  • 1/2 cup brown sugar (packed)
  • 1 egg
  • 1.25 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, add the butter, almond butter and both types of sugar.
  3. Cream together until well blended. Beat in the egg.
  4. In a medium bowl, sift together flour, baking powder, baking soda, and salt. Add the flour mixture to the butter mixture.
  5. Combine thoroughly, then chill the batter in the fridge for an hour.
  6. Roll into 1 inch balls and place on baking sheets.
  7. Flatten each ball with a spoon and press an almond into each cookie.
  8. Bake for about 10 minutes or until cookies begin to brown.
  9. Cool completely on a wire rack.
  10. Devour.
