Ingredients

  • 1 cup almond butter unsweetened
  • 2 egg
  • ⅓ cup pure maple syrup
  • 1 ½ cups oats
  • 1/2 tsp ground cinnamon optional
  • 1/2 tsp salt sea salt
  • 2/3 cup chocolate chips optional

Instructions

  1. Preheat 350 degrees Fahrenheit. Line a 8” x 8” square pan with parchment paper.
  2. Mix the almond butter, pure maple syrup, and eggs together in a large mixing bowl until everything is well combined and creamy (wet ingredients). Note: if your almond butter is cold or seems too firm to stir, microwave it for 20 to 30 seconds (by itself), or until it is easy to stir with the other ingredients.
  3. Add the remaining dry ingredients (oats, ground cinnamon, salt and chocolate chips) to the wet ingredients and stir everything together until a thick, sticky dough forms.
  4. Spread the cookie dough into an even layer in the prepared baking dish. If desired, sprinkle extra chocolate chips on top of the cookie bars. Flaky sea salt is lovely too!
  5. Bake on the center rack of the preheated oven for 25 to 30 minutes or until the edges are slightly golden brown and the bars appear set up. Allow the bars to cool for at least 30 minutes before slicing and serving.

Notes

  • Store cookie bars in an airtight container in the refrigerator for up to one week to maintain freshness.
  • To keep bars longer, freeze them in a large zip-top bag for up to three months.
  • Microwaving almond butter briefly before mixing helps if it is too firm to stir smoothly.
  • Sprinkling flaky sea salt or additional chocolate chips on top before baking improves flavor and texture.
  • Allow bars to cool fully before slicing to ensure clean, firm pieces.
