Ingredients

  • 1 1/2 cups (155g) almond flour
  • 1 cup (97g) quick oats
  • 2 teaspoons cinnamon powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 tablespoons unsalted butter softened at room temperature
  • 2 tablespoons unsweetened applesauce
  • 6 tablespoons coconut or brown sugar
  • 5 tablespoons Raw organic cane sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk the flour, oats, cinnamon, baking soda, and salt together.
  3. In a separate large bowl, use an electric hand mixer to beat together the butter and applesauce. Add in the sugars, egg, and vanilla, and beat until well combined.
  4. Stir the dry ingredients into the butter mixture, followed by the raisins. Cover and chill 15 minutes.
  5. Roll the dough into 1 tablespoon-sized balls and press out to about 1/3 inch thick.
  6. Bake until the edges are lightly golden brown and the cookies feel set, about 16 to 18 minutes. Let cool completely on the pan.
