Almond Flour Peanut Butter Cookies

Almond Flour Peanut Butter Cookies combine creamy peanut butter and rich butter with almond flour for a tender, slightly crumbly texture. Date sugar subtly sweetens these cookies, while a touch of baking powder helps them rise gently. Pressing a crisscross pattern on top with a fork creates a classic cookie appearance, and optional sea salt and chopped peanuts add texture and flavor. Baked at 350°F for about 12 minutes, these cookies yield a batch of similar-sized, 2-inch treats, ideal for sharing or snacking.

Ingredients

  • 8 oz butter salted
  • 6 oz date sugar
  • 6 oz peanut butter
  • 1 egg
  • 16 oz almond flour
  • 1 tbsp baking powder

Instructions

    Cup of Yum
  1. In a bowl, place the peanut butter, butter and date sugar and mix. Alternatively an electric stand mixer or food processor will work.
  2. Once blended, add the egg and continue to mix.
  3. Add the almond flour and baking powder and mix well.
  4. Using an ice cream scoop, (or spoon,) portion out each cookie onto a Silpat mat on a baking sheet. Using a fork, make a criss cross pattern on the top.
  5. Optional: decorate with sea salt and chopped unsalted peanuts.
  6. Then place the baking sheets into a 350 degrees F oven for about 11-13 minutes.

Notes

  • Use a 1½ inch scoop or spoon to portion cookie dough for uniform size and baking.
  • Optionally sprinkle sea salt and chopped unsalted peanuts on top before baking to add texture and a subtle salty contrast.
  • Bake cookies at 350°F for 11–13 minutes; watch for lightly golden edges to avoid overbaking.
