Almond Joy Cookie Recipe

Ingredients

  • ½ cup unsalted butter
  • ⅓ cup white sugar
  • ⅓ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups flour
  • ½ cup cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • ¼ cup sweetened condensed milk
  • ⅓ cup sweetened shredded coconut
  • ½ cup mini chocolate chips

  1. Preheat the oven to 350ºF and line baking sheets with parchment paper.
  2. Melt the butter until just melted. This can be done in the microwave in 15-20 second intervals, or on the stove top.
  3. In a large mixing bowl, cream together the melted butter with white sugar and brown sugar.
  4. Mix in the egg and vanilla, and continue beating for about a minute until mixture become light in color.
  5. In a separate bowl, sift or whisk together the flour, cocoa powder baking soda, and salt.
  6. Mix the dry ingredients into the wet ingredients until no dry spots remain.
  7. Take out ⅓ of cookie dough and set aside.
  8. Divide the remaining ⅔ of dough into 6 balls.
  9. Make an indentation with your thumb into the center of each ball and arrange on a cookie sheet with at least 3 inches of space between each
  10. In a medium mixing bowl, combine the sweetened condensed milk and coconut flakes.
  11. Evenly divide the coconut mixture into the center of each cookie dough ball.
  12. Now separate the reserved cookie dough into 6 portions and flatten with the palm of your hand. Place it on top of each filled cookie and pinch together.
  13. Press the chocolate chips into the tops of each cookie.
  14. Bake in center of oven 14-16 minutes until the edges begin to brown. Remove and allow to cool for 10 minutes and then move to a wire rack to complete cooling.

Notes

  • Any blend of chocolate chips or all one flavor will work.
