Aloo Ki Tarkari | Potato Curry
A delicious potato curry that's simple and quick! Similar to the curry you can get with Halwa Puri.

Ingredients
- 3-4 potatoes peeled and sliced thinly
- 1 small onion sliced
- ¼ cup oil
- ¼ teaspoon red chilli powder
- 3/1 teaspoon salt
- 3-4 green chillies whole
- Soya leaves a handful
Instructions
- Pour the oil in the pan and allow to heat up.
- Add the sliced onions and saute till the color starts to change to goldne brown.
- Now add the potatoes and saute with the onions for 3-4 minutes.
- Now add the red chili powder and salt. Stir in the spices.
- Add half a cup of water to the pan and cover. Let it cook until the potatoes are tender or about 10 minutes.
- Uncover the pan. The potatoes should be tender and the water should have evaporated.
- Add the whole green chillies and soya leaves.
- Cook for a further 2 minutes.
- Your delcious Aloo tarkari is now ready!

Notes
- Always keep peeled potatoes in cold water to avoid colour change.
- Adjust spices according to your taste.
- Ensure the potatoes are fully cooked and tender.
- If you can't find soya leaves, use coriander or parsley instead.
- Serve with hot puri or paratha!
