Amish Broccoli Bake

Ingredients

  • 1 can (10.75 ounce) cream of mushroom soup
  • 1 cup mayonnaise
  • ½ cup chopped onion
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 pound fresh broccoli florets
  • ¾ cup sharp cheddar cheese, shredded and divided
  • 3 ounces boxed herb stuffing mix
  • ¼ cup unsalted butter, melted

Instructions

  1. Pre-heat oven to 350°F and spray a 9x13-inch baking dish with non-stick cooking spray.
  2. In a large bowl, mix together the soup, mayonnaise, onion, salt, and pepper. Set aside.
  3. Spread an even layer of broccoli in the baking dish. Sprinkle on 1/2 cup of the cheese, followed by half of the stuffing mix.
  4. Drizzle on the melted butter and spread on the soup mixture.
  5. Sprinkle with the remaining ¼ cup cheese and bake, uncovered for 35 minutes, until warmed through and the cheese has melted.
