Ingredients

  • 3 oz. salted anchovy filets , in oil
  • 1 tablespoon capers
  • 2 cloves garlic , peeled and degermed
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon chopped parsley (or basil (optional))
  • black pepper

Instructions

  1. Place the garlic cloves and the parsley or basil (optional) in a mortar and, using a pestle, crush them until obtaining a creamy texture.
  2. Drain the anchovies.
  3. Add the anchovies and capers to the mortar, then continue to pound everything while adding the olive oil gradually.
  4. The consistency of anchoiade can be either slightly lumpy or smooth and homogeneous.
  5. Season with black pepper and mix.
  6. Serve on slices of toasted bread.
