Anthony’s Caesar Salad

Ingredients

  • 3 garlic cloves
  • 1/2 tablespoons dry mustard
  • 1 1/2 teaspoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 4 anchovies
  • 2 1/2 tablespoons red wine vinegar
  • 1 cup extra virgin olive oil
  • 2/3 cup Romano cheese grated
  • 1 1/2 heads romaine lettuce rinsed, dried, and torn into pieces
  • 1 cup croutons homemade
  • white pepper freshly ground, to taste

Instructions

  1. In large wooden bowl, mash garlic with mustard, Worcestershire, lemon juice, anchovies, and vinegar until smooth.
  2. Pour in oil while whisking and mix until smooth. Stir in cheese.
  3. Add lettuce and croutons. Toss well and serve on chilled salad plates.
  4. Offer freshly ground white pepper to sprinkle on top.
