Apple, Bacon and Gorgonzola Salad

Ingredients

Apple, Bacon and Gorgonzola Salad
  • 1 bag (12 ounces) spring salad mix
  • 3 romaine lettuce hearts rinsed then chopped
  • 8 lices Bacon cooked then crumbled, applewood smoked
  • 1/2 cup dried cranberries
  • 1 Granny Smith apple sliced, large
  • 1/2 cup pecans toasted
  • 1/3 cup gorgonzola cheese
Sweet Balsamic Vinaigrette
  • 1/2 cup vegetable oil
  • 1/4 cup sugar
  • 3 Tablespoons balsamic vinegar good
  • 1/8 teaspoon mustard powder or a squeeze of dijon mustard, dry
  • black pepper few twists, freshly cracked

Instructions

  1. Place all salad ingredients into a large salad bowl. Toss to combine.
Sweet Balsamic Vinaigrette:
  1. Combine all vinaigrette ingredients in a medium bowl. Whisk together until combined. It takes a couple minutes. Pour dressing over the top of salad and gently toss again. Serve immediately and enjoy!
