Apple Baked Oatmeal

Ingredients

  • 200 g (2 cups) old-fashioned rolled oats (not instant)
  • 106 g to 165 g (½ to ¾ cup) light brown sugar (adjust based on desired sweetness)
  • 120 g (1 cup) chopped pecans, divided (can substitute with walnuts or almonds)
  • 85 g (½ cup) raisins
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • ¼ teaspoon freshly grated nutmeg , optional
  • ½ teaspoon kosher salt
  • 2 large eggs
  • 480 g (2 cups) milk (preferably whole, but any milk percentage or non-dairy alternative can be used)
  • 1 tablespoon vanilla extract
  • 55 g (4 tablespoons) unsalted butter, melted, plus extra for greasing the dish
  • 2 tart-sweet baking apples (like Honeycrisp or Gala), peeled and cut into ½-inch chunks

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch baking dish with butter and set an oven rack in the middle position.
  2. In a medium bowl, combine the oats, light brown sugar, raisins, baking powder, cinnamon, and nutmeg.
  3. In another bowl, whisk the eggs to break them up, then add the milk, vanilla, and salt, whisking until everything is well combined.
  4. Pour the milk mixture into the oat mixture, add the melted butter, and stir until well combined. Gently fold in the apples and ½ cup of the nuts.
  5. Pour the oatmeal mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining ½ cup of nuts on top.
  6. Bake for 40-45 minutes, until the top is golden and the oats are set.
  7. Serve warm or at room temperature.
