Apple Blondies
Apple Blondies are sweet bars combining spiced batter with chopped apples, baked into a moist, tender treat infused with cinnamon and nutmeg. The inclusion of diced apples adds fresh fruit texture and subtle tartness balanced by brown sugar and butter sweetness.
Ingredients
- 1 1/4 cup all-purpose flour (142 g)
- 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup butter melted and cooled (1 stick or 113 g, unsalted
- 1 cup light brown sugar packed (200 g)
- 1 teaspoon vanilla extract
- 1 egg room temperature, large
- 2 apple peeled, cored and cut into 1/4-inch squares, medium
Instructions
- Preheat the oven to 350° F. Line an 8-inch by 8-inch pan with parchment paper and set aside.
- In a medium bowl, whisk together flour, baking powder, salt, cinnamon and nutmeg. Set aside.
- In a large bowl, whisk together melted butter and brown sugar until well combined, about 2 minutes. Add egg and vanilla and mix until incorporated. Add the flour mixture and stir just until combined (careful not to overmix). Fold in chopped apples.
- Transfer batter to prepared baking pan (the batter will be a little thick). Bake for 25 to 28 minutes or until a toothpick inserted into the center comes out clean. Cool and cut into squares and serve.
Notes
- Granny Smith or Honeycrisp apples are preferred for baking as they maintain texture and flavor.
- When mixing the flour, some pockets may remain, which will integrate once the apples are folded in.
- Store the blondies in an airtight container at room temperature for up to five days to maintain freshness.
