Apple Bread

Ingredients

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs room temperature
  • 1 cup oil
  • 2 teaspoons vanilla extract
  • 2 cups apples chopped and peeled (about 2 medium)
Apple Cider Glaze
  • 1/2 cup apple cider
  • 1 tablespoon salted butter
  • 6 tablespoons powdered sugar
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Grease and line a 9x5 loaf pan with parchment paper, also greasing the paper.
  2. In a large mixing bowl, whisk 3 cups all-purpose flour, 1 cup granulated sugar, 1 cup light brown sugar, 2 teaspoons ground cinnamon, 3/4 teaspoon ground nutmeg, 1 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/2 teaspoon salt together and set aside.
  3. In a separate bowl, whisk 4 large eggs, 1 cup oil, and 2 teaspoons vanilla extract. Add the wet ingredients to the dry ingredients and stir until combined. The batter will be very thick.
  4. Fold the prepared 2 cups apples into the batter and add to the prepared bread pan.
  5. Bake for 50 to 55 minutes or until a toothpick inserted into the center comes out clean. Cool the bread in the pans for 10 minutes before removing to a wire rack to finish cooling.
Apple Cider Glaze
  1. In a small saucepan, bring 1/2 cup apple cider to a boil over high heat. Reduce the heat and simmer until the liquid has reduced by half.
  2. Remove from the heat and whisk in 1 tablespoon salted butter, 6 tablespoons powdered sugar, and 1/4 teaspoon vanilla extract. Drizzle the warm glaze over the cooled bread.
