Apple Cinnamon Scones

Delicious, homemade Apple Cinnamon Scones with a fluffy, soft inside and crunchy topping. Tastes just like apple pie, but in scone form!

Ingredients

  • 2 cups all-purpose flour
  • ⅔ cup rolled oats
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • ½ cup butter unsalted, cold
  • 1 large apple peeled and chopped
  • ½ cup milk
  • ¼ cup honey
Topping
  • 2 tablespoon rolled oats
  • 1 tablespoon turbinado sugar
  • ½ teaspoon ground cinnamon
  • 2 tablespoon milk

  1. Preheat Oven: Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Combine Ingredients: In a large bowl, combine the flour, rolled oats, baking powder, cinnamon, baking soda, salt and nutmeg. Cut in the butter with 2 knives or a pastry blender. In another smaller bowl combine together the milk, honey and apple. Add this to the dry ingredients and toss.
  3. Form Dough: Turn onto a floured work surface and knead gently until everything is well combined. Form the dough into a circle that's about 9 to 10 inches in diameter and about 1/2 inch in thickness.
  4. Finish: Place the dough onto the prepared baking sheet. Cut into 8 wedges and separate the wedges so that they are about 1 inch apart. Brush the wedges with the milk (from the topping ingredients). Combine together the Turbinado sugar, ground cinnamon and rolled oats and sprinkle over each scone, generously.
  5. Bake: Bake for about 20 minutes or until nice and golden brown.

Notes

  • Cold butter is a must! - Work with cold butter. After cutting it into cubes, you can even let them sit in the freezer for 5 minutes before starting.
  • Don't over mix! - Don’t overwork the dough. You want the butter to still be in pieces to keep your scones light and flaky.
  • Get the right tools! - Use a pastry blender. It’ll make the process of cutting the butter into the dry ingredients much easier..
  • Flour up! - You want the dough to be sticky, so flour your hands and work surface as needed so that you can still handle it.
  • Apples galore! - Test out different varieties of apples to see which you prefer and really perfect the recipe!
  • Store your scones in an airtight container, bread box, or freezer bag to keep them from drying out! They will last 1-2 days at room temperature or up to 7 days stored in the fridge.
