Ingredients

  • 2 pounds tart apples peeled, cored, and cut into ½-inch chunks
  • ½ cup lightly packed light brown sugar
  • 1 teaspoon apple pie spice
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest optional
  • 1 tablespoon lemon juice
  • 1 teaspoon pure vanilla extract

Instructions

    Cup of Yum
  1. Add the diced apples, brown sugar, apple pie spice, orange juice, orange zest, and lemon juice to a medium heavy-bottomed pot. Place over medium-low heat. Cook, stirring frequently, for 30-40 minutes or until the apples have softened but still retain most of their shape and the juices have thickened into a syrupy consistency.
  2. Remove from the heat and stir in the vanilla.
  3. Serve warm or chilled over pancakes, waffles, french toast, yogurt, ice cream, etc.
  4. Store in an airtight container in the refrigerator for up to 3 days.
