Apple Cookies

These Apple Cookies are so delicious! Apple Cookies are drop cookies, the easiest cookie you can make! The inside is soft and chewy and the nuts and apples give them a nice, crispy crunch!

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cloves ground
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 1/2 cup brown sugar
  • 2 egg
  • 1 cup apple chopped
  • 1 cup nuts chopped
  • 2/3 cup powdered sugar
  • 1 Tablespoon milk or water

Instructions

  1. Preheat oven to 350­°F.
  2. Use a stand mixer to mix these cookies, or mix by hand.
  3. Mix flour, baking soda, salt and spices (or substitute store bought or homemade apple pie spice.)
  4. Cream butter.
  5. Add sugar and beat until dough is light and fluffy.
  6. Add eggs and combine.
  7. Incorporate dry ingredients, just until mixed. Do not overmix.
  8. Mix in chopped apples and nuts by hand.
  9. Place rounded teaspoon piece of dough (or use a small cookie scoop) on parchment paper covered baking sheet. (or place on silicone baking mats)
  10. Bake for 10-12 minutes, until golden.
For glaze
  1. Mix powdered sugar with milk or water until lumps disappear. Mix by hand or with a mixer.
  2. Drizzle onto cookies.

Notes

  • Chop apples into larger pieces, if you like big chunks. You can grate the apple to distribute it even through the dough, also.
  • Bake on parchment for easy clean up.
  • General Baking Tips:
  • Always measure dry ingredients with a dry measuring cup. Measure with dry measuring cups or weigh dry ingredients.
  • Always measure liquid ingredients with liquid measuring cup
  • Never break eggs directly into recipe ingredients. Break eggs into a separate bowl, in case you get any shells, so that you can pull them out.
  • Make sure that you know what temperature your oven is set at. Buy an oven thermometer and check oven temperature regularly.
  • Always check baked goods, like cakes or quick breads with cake tester, placed in center. If the tester comes out clean, it’s done.
  • Always cool cookies and baked goods on wire racks so that they don't get soggy.
