Apple Empanadas

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cold water
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 teaspoon salt
  • 3 large apples peeled and finely diced
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg beaten for egg wash
  • 2 tablespoons Granulated sugar for sprinkling

Instructions

  1. In a large mixing bowl, combine flour and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add cold water and mix until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. In a saucepan over medium heat, combine diced apples, sugar, cinnamon, and nutmeg.
  6. Cook until apples are soft and the mixture has thickened, about 15 minutes. Let cool.
  7. Preheat oven to 375°F.
  8. Roll out the dough and cut into circles using a 4-inch cutter.
  9. Place a spoonful of apple filling on one half of each circle.
  10. Fold the dough over the filling and press the edges with a fork to seal.
  11. Brush the tops with beaten egg and sprinkle with sugar.
  12. Bake for 25 minutes or until golden brown.
