Apple Pie Bites with Caramel Dipping Sauce

Apple Pie becomes a bite sized snack to dip in a Homemade Caramel Sauce using delicious Envy Apples, the perfect summer time treat!

Ingredients

Apple Pie Filling
  • 2 cups Envy apples peeled and chopped (roughly 2 apples)
  • 2 tbsp butter
  • ¼ cup brown sugar
  • 2 tbsp flour
  • 1 tsp cinnamon
  • ¼ cup water
  • ¼ tsp salt
  • up to 1/4 cup water
Apple Pie Bites
  • 9 inch Pie Crust Dough
  • 1 egg white
  • 1 tbsp water
  • ¼ cup granulated sugar
  • 1 tbsp cinnamon
  • Homemade Caramel Sauce

Instructions

Apple Pie Filling
    Cup of Yum
  1. combine all ingredients except the water in a medium sauce pan and place on medium heat
  2. allow to thicken and the apples to soften
  3. add water 1 tbsp at a time if it becomes to thick
  4. remove from heat and allow to cool to room temperature
Apple Pie Bites
  1. preheat oven to 350 degrees F
  2. roll pie crust to 1/8th of an inch over a lightly floured surface
  3. using a 3 inch circle cookie cutter or biscuit cutter cut out circles
  4. place circles on parchment lined baking sheets
  5. spoon out a teaspoon of apple pie filling on one side of the pie crust circles (make sure all apple pieces are laying on their sides)
  6. fold over the pie crust to cover the pie filling and form half circles
  7. using a fork press the edges together, sealing the pie filling inside
  8. in a small bowl whisk the egg white and tablespoon of water
  9. brush over the pie bites
  10. in a small bowl combine the sugar and cinnamon
  11. sprinkle over top of the pie bites
  12. bake for 18 to 20 minutes or until crust is golden brown and crispy
  13. allow to slightly cool on the pan for 5 to 10 minutes
  14. serve with Homemade Caramel Sauce for dipping
