Apple Pie Cake

Apple Pie Cake combines a moist yellow cake base with a layer of sliced tart apples tossed in brown sugar, cinnamon, and lemon juice, topped with a crunchy crumbly streusel. Baking the apple mixture right on the cake batter results in tender baked apples with soft edges under a buttery sweet topping. It's a versatile dessert that pairs well with vanilla ice cream or whipped cream and highlights the textures of soft cake and tender, cinnamon-spiced fruit.

  • ½ cup brown sugar
  • ¼ teaspoon salt
  • ½ cup butter cut into small pieces

Instructions

  1. Preheat oven to 350℉ and spray a 9x13 inch pan with baking spray.
  2. Prepare the yellow cake according to package instructions: add cake mix, 3 eggs, water and oil to the bowl of your mixer and mix on low speed for 2 minutes. Pour into prepared pan.
  3. In a medium bowl, toss together the apple mixture ingredients together and spread over the cake batter.
  4. In a medium bowl stir together the flour, brown sugar and salt for the topping and cut in the butter using a fork or pastry blender until mixture is crumbly. Sprinkle topping over the apples and cake batter, evenly.

Notes

  • Choose tart apples like Granny Smith to balance the sweetness in the apple layer.
  • Check baking doneness starting at 35 minutes, as oven temperatures vary.
  • Add chopped walnuts or pecans to the topping for extra texture.
  • Apple mixture and topping can be prepped a day ahead and refrigerated separately.
  • Serve with vanilla ice cream or whipped cream for a complementary creamy addition.
