Ingredients
- 3 cups old-fashioned oats (gluten free, if preferred)
- ¾ cup raw pecans roughly chopped
- ⅓ cup raw pepitas
- 3 tablespoons pure maple syrup
- 3 tablespoons coconut oil melted
- ¼ teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- ¾ teaspoon freshly grated nutmeg
- ¾ teaspoon ground ginger
- ½ teaspoon salt
- 1 cup chopped dried apples
- ⅓ cup dried tart cherries
Instructions
- Preheat the oven to 325 degrees F.
- In a large bowl, stir together the oats, pecans and pepitas.
- In a small bowl, stir together the maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, ginger and salt.
- Pour the maple syrup mixture over the oat mixture and mix well until the oats and nuts are coated. Transfer the granola to the baking sheet.
- Bake until the granola is light golden brown, stirring once or twice, 20 to 25 minutes.
- Let the granola cool completely. Transfer to a large bowl and stir in the dried apples and dried cherries.
- Store in an airtight container, such as a glass jar, for up to 2 weeks.
