Apple Pie Overnight Oats

If you like oatmeal but have never tried overnight oats you should definitely give this method a try. And of course if you want an extra taste of fall, make my recipe for Apple Pie Overnight Oats.

Ingredients

  • ½ cup Bob's Red Mill Steel Cut Oats
  • 1 teaspoon Bob's Red Mill Coconut Sugar
  • ¼ teaspoon apple pie spice
  • 1 tablespoon ground flaxseed
  • 1 cup 2% organic milk
  • 2 tablespoons homemade applesauce
  • ½ cup Stonyfield Organic whole milk vanilla Greek yogurt
  • 2 tablespoons honeycrisp apple chopped
  • Cinnamon for garnish

Instructions

  1. In a 16 ounce wide mouth mason jar, layer the Bob's Red Mill Steel Cut Oats, Bob's Red Mill Coconut Sugar, Apple Pie Spice, and ground flaxseed. Mix well then pour the milk on top. Add in the homemade applesauce and top with a ½ cup Stonyfield Whole Milk Vanilla Greek Yogurt. Seal with lid and refrigerate for at least 8 hours.
  2. The next morning, when your ready to eat, mix the oats well (if they seem to dry add in additional milk or yogurt to desired consistency) and top with freshly chopped honeycrisp apple and sprinkle with ground cinnamon. Enjoy!

Notes

  • If you don't have steel cut oats, then rolled oats will work as well. Just stay away from quick oats as the texture won't be right.
