Apple Salad

With a simple citrus dressing, apple salad is packed with texture and simple, bright flavors. It's refreshing and made in minutes!

Ingredients

Dressing
  • 3 tangerines, juiced
  • 2 tablespoons olive oil
  • ½ lemon, juiced
  • 1 clove garlic, minced
  • ½ teaspoon lemon zest
  • salt to taste
Salad
  • 1 (10-ounce) package baby greens
  • ½ cup chopped walnuts
  • ⅓ cup crumbled Feta cheese
  • 2 teaspoons lemon zest
  • 1 apple, cored and thinly sliced
  • 1 avocado, peeled, pitted and diced

Instructions

  1. Make dressing by combining tangerine juice, oil, lemon juice, garlic, lemon zest, and salt in a container. Seal and shake until combined.
  2. Make salad by tossing together the baby greens, walnuts, feta, lemon zest, and apple together in a large bowl.
  3. Add dressing and toss to coat.
  4. Top with avocado and any more dressing or feta, if desired.

Notes

  • Make ahead of time. Prepare the dressing 1-2 days before. The salad can be assembled a few hours before serving, but be sure to treat the apples and avocados with Balls Fresh Fruit. Don't add the dressing until right before serving.
  • STORE. Depending on how much dressing the salad has on it leftovers can be stored in an airtight container in the refrigerator for 1-3 days.
