Ingredients

  • 3/4 cup granulated sugar
  • 2/3 cup brown sugar light
  • 1/2 cup butter unsalted at room temperature
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon apple spice mix
  • 1/4 teaspoon salt
For rolling in batter
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons apple spice mix

  1. Preheat oven to 400 degrees. Line two baking sheets with parchment paper and set aside.
  2. In a medium bowl beat the granulated sugar, brown sugar and butter at medium speed until light and fluffy. Beat in egg and vanilla.
  3. In a small bowl, whisk together flour, baking powder, 1/2 teaspoon apple spice, and salt until combined. Add flour mixture to creamed butter, and beat until just combined. Shape dough into balls (about 30).
  4. Combine 1/3 cup granulated sugar and 1 1/2 teaspoon apple spice mix in a shallow dish. Roll balls in sugar and place 2 inches apart on prepared cooking sheets. Bake for 8 minutes. Cool on pan for a minute then transfer to a wire rack.
