Apple Walnut Bread
Simple Apple Walnut Bread with applesauce. Recipe from Family Fun magazine. Maple butter is a great accompaniment.
Ingredients
- 1 cup applesauce smooth, unsweetened
- 1/2 cup sugar plus 1 Tablespoon for sprinkling
- 1/2 cup light brown sugar packed
- 2 egg large
- 1/4 cup vegetable oil
- 1/4 cup PLAIN yogurt
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 cup peeled cored, and finely diced apple
- 1/2 cup walnuts chopped
- For the Maple Butter:
- 8 Tablespoons butter unsalted
- 2 Tablespoons pure maple syrup
Instructions
- Preheat oven to 350 degrees F. Grease a 9" x 5" loaf pan and set aside.
- Combine the wet ingredients, applesauce through vanilla extract, in a large bowl. Whisk well to blend.
- In another large bowl, combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Make a well in the dry ingredients with a spoon and pour in the applesauce mixture. Stir just enough to combine; do not over mix. Fold in the apples and walnuts.
- Pour into pan and smooth. Sprinkle 1 Tablespoon of sugar over top of bread and bake 45-50 minutes or until a toothpick comes out clean.
- Remove from oven and allow to cool about 15 minutes. Remove from loaf pan and finish cooling on a wire rack.
- For Maple Butter, whip softened butter with maple syrup. Chill.
