Apple Walnut Spice Cake is a moist bundt cake featuring diced apples and toasted walnuts, infused with cinnamon, nutmeg, and allspice. The batter blends sugars, oil, and vanilla with seasoned flour, then folds in fruit and nuts for texture and warmth. A caramel glaze adds a glossy, sweet finish. • 1 cup sugar
  • ½ cup brown sugar packed
  • 1 cup vegetable oil
  • 2 teaspoon vanilla extract
  • 2.5 cups flour all purpose
  • 1 teaspoon baking soda

Instructions

    Cup of Yum
  1. Preheat oven to 350°
  2. Prepare a 10-inch bundt pan by spraying with cooking spray.
  3. Peel, core and dice apples. There should be around 2 cups when diced

  5. Beat at low speed about 1 minute.

Caramel Glaze
  1. In a glass bowl, melt butter in the microwave, about 30 seconds
  2. Whisk in brown sugar, cream, and vanilla until smooth
  3. Return to the microwave and heat on high about 2 minutes, or until sugar is dissolved

Notes

  • Toast walnuts in a 350°F oven for 5 minutes and cool before adding.
  • Lightly spray and flour bundt pan to prevent sticking, especially if not non-stick.
  • Peel, core, and dice apples to yield about 2 cups for the batter.
