Applebee’s Grilled Chicken Oriental Salad

This salad features grilled chicken breast served atop romaine lettuce with shredded carrot, crispy rice noodles, and toasted sliced almonds, all dressed with a tangy Oriental-style dressing. The chicken is pounded thin, seasoned simply, and grilled to remain juicy. Toasting the almonds adds a nutty flavor and crunch, complementing the varied textures in the salad.

Ingredients

  • 1 pound chicken breast 2 portions, boneless, skinless
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup almonds sliced
  • 8 cups romaine lettuce
  • 1/4 cup carrot shredded
  • 1/2 cup rice noodles crispy
  • 4 tablespoons salad dressing Applebees Oriental

Instructions

  1. Heat the grill to medium, or heat a cast-iron skillet or grill pan over medium heat.
  2. Place the chicken breasts between two sheets of plastic wrap and gently pound them to 3/8-inch thick.
  3. Brush chicken breasts with olive oil and season them with salt and pepper.
  4. Grill chicken breasts for 5 to 7 minutes on each side, until cooked through. Transfer to a plate to rest for 4 to 5 minutes before slicing. 
  5. Toast the almonds in a small dry skillet over medium heat. Watch them carefully—there is a fine line between toasted almonds and burnt almonds! Shake the pan gently. When you begin to smell the almonds, toast for a few seconds more, then immediately place the almonds on a paper towel. Allow them to cool for a moment or two. 
  6. Assemble salads by first putting the lettuce in bowls or on plates, 3 to 4 cups per serving.
  7. Sprinkle each with 2 tablespoons of carrots, 1/4 cup crispy rice noodles, and 1/4 cup toasted almonds.
  8. Arrange the chicken on top.
  9. Serve with Applebee’s Oriental Salad Dressing. 

Notes

  • Marinate the chicken for 30 minutes in soy sauce, sesame oil, and minced garlic to deepen flavor before grilling.
  • Toast sliced almonds carefully to avoid burning and to achieve a balanced nutty aroma.
  • The salad dressing can be made up to three days ahead and stored in an airtight container in the refrigerator.
  • Slice the grilled chicken on a slight diagonal for texture and presentation similar to Applebee’s.
