Applesauce Muffins

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups applesauce unsweetened
  • 1/2 cup sugar
  • 1/4 cup avocado oil (or any neutral-flavored oil)
  • 1/4 cup coconut or brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon raw cane sugar

Instructions

  1. Heat oven to 400°F and grease a muffin pan.
  2. In a medium bowl, whisk the flour, spices, salt, baking powder, and baking soda.
  3. In a separate, large bowl whisk all the remaining ingredients except the raw sugar.
  4. Add the dry ingredients into the wet and stir until just combined.
  5. Scoop into the muffin pan (I like using an ice cream scoop) and sprinkle with the raw sugar.
  6. Bake for 5 minutes. Then, reduce the heat to 350°F and bake another 13-15 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the pan for 10 minutes and then transfer to a wire rack to cool completely.
