Apricot Dessert Tacos

Apricots are caramelized in brown sugar, added to tortillas with sweet mascarpone cheese, rolled up, baked & topped with honey for tasty dessert tacos!

Ingredients

  • 1 lb apricots peeled and sliced
  • 1 lemon juiced
  • ¼ cup water
  • 1 tsp ground cinnamon
  • ½ cup brown sugar
  • 1 cup mascarpone cheese or cream cheese
  • ¼ cup powdered sugar
  • 1 tbsp vanilla extract
  • 8 small flour tortillas
  • 2 tbsp butter
  • 1 tbsp cinnamon sugar
  • 1/4 cup honey

Instructions

  1. Preheat oven to 425°F.
  2. Add the sliced apricots to a large skillet over medium heat.
  3. Top with the lemon juice and water.
  4. Sprinkle with the cinnamon and sugar.
  5. Caramelize for 10-12 minutes.
  6. Whip the mascarpone, powdered sugar and vanilla together in a large bowl.
  7. Spread the cheese mixture in the middle of each tortilla.
  8. Top with caramelized apricots.
  9. Roll the tacos tightly and place on a baking sheet.
  10. Brush with butter and sprinkle with cinnamon sugar.
  11. Bake for 12-15 minutes.
  12. Remove from the oven and immediately drizzle with honey.
