Apricots poached in chamomile tea with vanilla

A super easy and delicious recipe for apricots poached in chamomile tea with vanilla.

Ingredients

  • 2 cups chamomile tea strongly brewed
  • 3/4 sugar 1 cup
  • 1 vanilla pod split and seeds removed
  • 750 - 800 g apricot halved with pips removed

Instructions

  1. Bring the tea, sugar and split vanilla pod to a boil and allow to simmer for about 5 minutes then add the fruit.
  2. Apricots (especially very ripe ones) poach very quickly, so you will need to cook them for a maximum of about 3 - 5 minutes.
  3. Remove the apricots with a slotted spoon and set aside. If you leave them in the boiling syrup they will turn to mush.
  4. Allow the syrup to cool and serve either warm or cold with ice cream.

Notes

  • Try to use apricots that are not overly ripe with this recipe otherwise they might fall apart.
