Arakas Latheros (Greek Peas)
A delicious combination of sweet green peas, with potato, feta and lemon is a surprisingly fresh and tasty combination. Packed full of flavour and personality it's a dish that elevates the humble pea to an all-time high.
Ingredients
- ⅓ cup extra virgin olive oil
- 1 onion diced, small
- 7 oz tomato grated - about 200g
- 2 potato peeled and cut into 2” pieces - around 12oz/350g, medium
- 1 cup vegetable stock or broth
- 1 dill chopped, small bunch
- 1 lemon
- 17 oz peas around 500g, frozen
- salt
- black pepper
- ½ cup feta cheese
Instructions
- Heat the oil in a large deep sauté pan until hot. Add the spring onion and fry for 1-2 minutes until soft
- Add the potatoes and garlic and fry for 1 minute then add the grated tomato and vegetable broth.
- Bring to a simmer then reduce the heat and cover the pan. Cook for 10 minutes until the potatoes are just beginning to soften.
- Add the peas and cover the pan again and cook gently for another 10 minutes.
- Remove the lid and turn up the heat to simmer off most of the liquid.
- Remove from the heat and stir in the lemon zest, juice and dill. Season well with salt and pepper.
- Transfer to a serving dish or serve from the pan scattered with crumbled feta cheese.
