Arroz Amarillo [Recipe + Video] Dominican Yellow Rice

This quick arroz amarillo recipe for Dominican yellow rice with carrot and onion is perfect for reusing white rice leftovers and serving a spectacular dish in no time.

Ingredients

  • 1 large carrot
  • 1 large red onion
  • 3 tablespoons olive oil
  • 6 cup cooked white rice (arroz blanco per our recipe)
  • ½ cup vegetable broth divided
  • 1 sprig parsley minced

Instructions

1. Sauté vegetables

  1. Heat oil over medium heat in a large skillet.Add carrots and onion, stir and cook, covered, for a couple of minutes.
2. Add rice
  1. Add the white rice and mix well. Add half the vegetable broth, and cook over low heat for two minutes. If you find the rice too dry, you can add some more broth and cook till your preferred doneness.
3. Serve
  1. Fluff the rice with a fork and mix it with the parsley.Serve with avocado and any of the choices listed above.

Notes

  • If you do not have vegetable broth, use a bouillon cube dissolved in a cup of hot water. Keep in mind that these have salt, and may affect the level of salt in the final result.
