Artichoke Salad Dressing

This artichoke salad dressing is deliciously tangy. It's made from marinated artichoke hearts that you can pick up at the grocery store, and it only takes about 5 minutes to make a batch!

Ingredients

  • 1 artichoke hearts drained, small (6 fluid ounces) jar, marinated
  • 1/2 cup olive oil
  • lemon juice juice from 1 lemon
  • 3 tablespoons white wine vinegar
  • 1/2 shallot chopped
  • 1 clove garlic minced
  • 1/2 teaspoon Dijon mustard
  • 1 tablespoons sugar
  • salt to taste

Instructions

    Cup of Yum
  1. Mix all ingredients together in a blender until smooth. Give it a taste and adjust seasonings as needed. 
  2. Store dressing in refrigerator for up to a week.

Notes

  • Recipe makes enough for a few salads (serves at least 6-8 people).
