Arugula Pasta with Sausage

Ingredients

  • 1 Tablespoon olive oil
  • 1/2 lb cooked Spicy Italian sausage
  • 1 pint cherry tomatoes
  • 12 oz cooked pasta
  • 8 oz arugula
  • salt and pepper to taste
  • 2 Tablespoon Parmesan Cheese optional

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sausage and cook for 5 minutes.
  3. Cut the cherry tomatoes in half and cook for 2-3 minutes.
  4. Add the cooked pasta and the arugula, and toss in the skillet until the greens start to wilt and the pasta is warmed up, about 5 minutes.
  5. Serve with Parmesan cheese if desired.
