- 1 Tablespoon olive oil
- 1/2 lb cooked Spicy Italian sausage
- 1 pint cherry tomatoes
- 12 oz cooked pasta
- 8 oz arugula
- salt and pepper to taste
- 2 Tablespoon Parmesan Cheese optional
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sausage and cook for 5 minutes.
- Cut the cherry tomatoes in half and cook for 2-3 minutes.
- Add the cooked pasta and the arugula, and toss in the skillet until the greens start to wilt and the pasta is warmed up, about 5 minutes.
- Serve with Parmesan cheese if desired.
